One thing about the stay-at-home orders, I’ve been cooking a lot more. Finally getting to all of my Pinterest boards that I’ve spent hours years putting together. Some wins. Some fails. With all of the cooking, comes all of the dishes. One thing I go-to in order to cut down on some of the dishes is my air fryer. But, really, who am I kidding, I go to my air fryer because it is so easy to use (once you figure it out).
While I haven’t tried any of these recipes, minus their fryer broccoli parmesan (big win), I plan on making them all ASAP. Each one sounds delicious and hopefully increases my veggie intake.
1. Air Fryer Broccoli Parmesan
This recipe is from Happy Veggie Kitchen and it looks AMAZING. “Crispy, garlicky, cheesy broccoli at lightning speed” – yes, please! I love restaurant broccoli, but always seem to have mushy broccoli at home. YUCK. I think this might be the key to making it right.

2. Air Fryer Zucchini Fries
If you’re low carb-keto, you’re in luck. These fries are both. If you love fries, but need to stop eating them everyday (raises hand) – then I think you’ll love this alternative. They’re light, crispy, and packed full of flavor.

3. AIR FRYER BRUSSELS SPROUTS WITH JALAPENO DIPPING SAUCE
Crispy brussels sprouts + a delicious jalapeรฑo dipping sauce? Sign me up because there is no better way to eat vegetables than crippling them up and dipping them in a homemade sauce. YUM! PS – I love all of the air fryer recipes The Beard and the Baker creates. They’re all very easy to follow and pack in all the flavor.

4. Air Fryer Asparagus with Lemon and Garlic
I frequently roasting asparagus in the oven. It is delicious and flavorful, but does take a bit of time. I am interested to see how it turns out in the air fryer. I think the lemon and garlic combination will add a nice zing.

5. Cinnamon Honey Glazed Air Fryer Sweet Potato Bites
Just re-read that again. CINNAMON HONEY GLAZED sweet potato bites. I am already drooling. I really hope I don’t mess thing one up because this sounds amazing. One funny thing she wrote, “These Cinnamon Honey Glazed AIr Fryer Sweet Potato Bites are a super quick, easy side that goes with any meal! Toddlers love them too!” Funny she says toddlers love them, as if I am sharing with my toddlers. ๐

6. Garlic Parmesan Air Fryer Carrot Fries
Do you love sweet potato fries? I do! I could eat them daily, but – the calories add up. I am thinking that I will absolutely love these crispy air fryer carrot fries because , one they look amazing and two, carrots have roughly half the calories of sweet potatoes. I think that means I can for sure add extra cheese and leaving room for extra cheese and garlic infused olive oil, right? Kidding.

7. GREEN BEANS WITH CARAMELIZED SWEET ONIONS
Green beans are my favorite. Paired with caramelized sweet onions? This might have to be on a weekly rotation. Bonus: This recipe is vegan, gluten-free, low carb, keto and whole 30. Woah. I feel healthier just typing that.

8. air fryer zucchini chips
I can’t get zucchini crunchy enough in the oven. Hoping this recipe will give me the crispy, crunchy Zucchini Chips I am looking for. The recipe looks quick and easy. Bonus that they’re a healthy snack!

9. General Tsoโs Cauliflower
General Tso’s is my go-to order when we get Chinese. This seems like the perfect way to get my fix at home and make it just a bit healthier. Maybe? Plus, anyway to dress up cauliflower just a bit is a win in my book.

10. Air Fryer Mexican Street Corn On The Cob
I’ve never thought to make corn on the cob in the air fryer. I love corn on the cob, especially Mexican street corn. I mean how can you not love thatโs slathered mayonnaise, cotija cheese, and chili powder sauce. This for sure just went to the top of my must make list.

11. Air Fryer Mushrooms | Whole 30 | Paleo with Southwest Ranch
Unlike my husband, I am a big fan of mushrooms. I really will eat them anyway, but add a little crunch and a dipping sauce? Yep, I am here for that! This recipe is whole 30 and includes a paleo dipping sauce, making me feel like it’s healthy enough to eat the entire plate. That’s how that works, right?

12. AIR FRYER THREE CHEESE STUFFED MUSHROOMS
I know I shared a mushroom recipe just before this one, but c’mon, look at these babies. This recipe is loaded with parmesan, sharp cheddar, and white cheddar cheese, creamy cream cheese, and savory garlic…..MAJOR YUM. This would be perfect for an appetizer, snack or side dish. Heck, you can probably make these for lunch or dinner, too. Oh, and if you’re on KETO lifestyle – I am pretty sure this hits all the points.
