Easy Breakfast & Lunch Ideas for Kids

It’s the end of September, which means school has been back in session and we’re starting to get into a routine. While our girls are not in school, just yet, we are still trying to stay in a routine between working at home, in the office and doing an at-home preschool type of schedule. This means, the mornings are busy and figuring out breakfast/lunches are still a little complicated at times! Luckily, there are some fabulous products out there right now that make breakfast/lunch super easy and delicious!

In addition to accessing food through traditional food pantries, the Feeding America network also offers specialized programs to help kids get the food they need when they need it most.

Okay, I will admit it, pancakes are a STAPLE in our household. Whether it’s breakfast, lunch, or dinner – it’s a guarantee that we will have pancakes more than once a week. The girls love them, and they’re pretty easy to make. I didn’t realize how easy and delicious they could be until I found the pancake mixes from King Arthur a few months ago. You literally just add water! They’re the most tender and fluffy pancakes you can make at home.

Our two favorite mixes are the buttermilk and the confetti. The buttermilk pancakes are made with real buttermilk! The confetti mix has colorful all-natural (no artificial ingredients or synthetic colors) baked right inside for a fun surprise with every bite. Only 5 grams of added sugar, if you’re wondering. Since they’re so easy, the girls have pretty much figured out how to make them. They love being in the kitchen with me, measuring out the mix, and adding the water. Their favorite part might be mixing it. They’re super easy to make on a busy morning with such few steps, but we also love making them ahead of time and freezing them. Easy to warm up in the microwave or pop them in the toaster.

Muffins from Veggies Made Great

Wait, did I say veggies and muffins in the same sentence?! I sure did. Vegetables are the first and primary ingredient in every Veggies Made Great product. Our two favorites are the double chocolate muffins and the spinach egg white frittata. If the girls had to choose, I know they would choose the chocolate ones as their favorite! Mighty Sesame Organic & Harissa Tahini

My husband and I put sauce on everything and it seems as if we’ve passed that quality down to our girls. They want to dip or drizzle something on EVERYTHING. I was excited to see The Mighty Sesame in this collaboration because we love tahini, but never have it in the house because I can’t ever get it right when I try to make it. The two we tried – Mighty Sesame Organic Tahini and Mighty Sesame Harissa Tahini we absolutely delicious. Very flavorful, plus an excellent source of protein, vegan and gluten free. We’ve used them as dips for our veggies and dressing for our salads/rice bowls. I’ve seen some people use the Harissa Tahini as a vegan replacement for mayonnaise.

Rice Cups from Minute Rice

Did you know Minute Rice debuted in the ’40s?! Not to be punny, but it was an instant hit and still is! No weird processing or bad chemicals, just wholesome rice that was quick and easy to make. Nothing added but convenience. There are SO MANY ways to use these cups. The rice is fully cooked and ready in 1 minute in the microwave – which is the easiest way to use it. We also love to sautรฉ veggies and mix it in, as well as grill chicken and put it over top of it. There are a ton of recipes on their website, too.

The other day I made lunch for the girls and I using the Minute White Rice and the Mighty Sesame Tahini. It was super easy, delicious and nutritious. I roasted some cauliflower, sautรฉed veggies, microwaved the rice, mixed it all together and drizzled the harissa tahini on top. A bowl full of flavor!
